Chocolate Ice Cream & Winner of Momma Zen!

Adapted from The New Basics Cookbook by Julee Rosso & Sheila Lukins, one of my all-time favorite cookbooks.
Bittersweet Chocolate Ice Cream
4 extra-large egg yolks
3/4 cup sugar
1 cup milk
1 cup heavy or whipping cream
7 oz. good-quality bittersweet chocolate, broken into small pieces (I used a few tiny Toblerones in place of several of the ounces)
3/4 cup buttermilk (did you know you could make homemade buttermilk by adding about 1 T. of lemon juice per 1 cup of milk and letting it sit a few minutes?)
- Using an electric mixer (I mixed by hand…see how easy this is?), cream the egg yolks and sugar in a bowl until the mixture is thick and light.
- Combine the milk and cream in a 6-cup microwave-safe casserole, and cook at full power (650 to 700 watts), uncovered, for 2 minutes.
- With the mixer running (or your hand stirring), slowly add the hot milk-cream mixture to the egg yolks, and blend until smooth.
- Transfer the mixture to the casserole and return it, uncovered, to the microwave. Whisking once a minute, cook until the mixture is thick and coats the back of a spoon, 3 minutes.
- Remove the casserole from the microwave and add the chocolate, whisking until melted and smooth. Then whisk in the buttermilk.
- Allow the custard to cool to room temperature. Then refrigerate it, loosely covered, until chilled, a minimum of 3 hours.
- Transfer the mixture to an ice cream maker and freeze according to manufacturer’s directions.
Note: This recipe was cooked on High (full power, 650 to 700 watts) in a carousel microwave, using a microwave-safe container.
If your microwave does not have a carousel, you may have to rotate the dish while it is cooking.
