All Things Considered Interview & 5-Minute Chocolate Mug Cake
Today, Minnesota Public Radio’s All Things Considered aired my Eve interview. I’ve placed it on my Media Page, so you can take a listen.
To celebrate, Liliana and I made 5-Minute Chocolate Mug Cake. Have you heard of this? My friend Clare sent me the recipe right before we were to leave for Hawaii, thinking that, perhaps, we might enjoy a small treat in the hotel room, but alas, I had no opportunity to do so, and decided to save it for later. Well, now Liliana and I had another reason to have an afternoon tea party with chocolate cake.
I’ll break it down for you, if you’d like. Then you, too, can have chocolate cake in 5 minutes or less!

5-MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug
Mix the dry ingredients in a mug. Add the egg and whisk. [I did all the mixing in a bowl. It was much easier. Then I poured into the mug.]
Pour in the milk and oil. Mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.
Place your mug in the microwave and cook for 3 minutes (the first one I cooked at 2 minutes and found it to be rubbery…the second was much better at a 1:20 minutes…next time, I would go even lower…perhaps 1 minute) at 1000 watts. The cake will rise over the top of the mug, but don’t be alarmed! [Can you see yours truly in the window?]
Allow to cool a little, and tip out onto a plate if desired.
